Here’s what’s cookin’ Meat Loaf
Recipe from the kitchen of Jan Marwitz
Serves 4
Ingredients
- 1 can tomato soup
- ¼ cup water
- 1 cup bread crumbs or oatmeal
- ¼ cup chopped onions
- ¼ cup chopped bell pepper
- ½ tsp. salt
- Dash of pepper
- 1 beaten egg
- Ground beef [quantity not given on the card]
Directions
Blend 1 can tomato soup and ¼ cup water.
Combine ½ cup of this mixture with 1 cup bread crumbs or oatmeal, ¼ cup chopped onions, ¼ cup chopped bell pepper, ½ tsp. salt, dash of pepper, 1 beaten egg, and mix thoroughly with ground beef.
Place and shape in loaf pan and bake at 350° for 1 ½ hours. After 1 hour, loaf may need draining.
Heat other half of soup mixture and serve over meat loaf.
Notes
- The card never states how much ground beef to use. For these proportions (1 cup crumbs, 1 egg, serves 4), 1 ½ to 2 lbs. is the usual amount — but that is a reconstruction, not what Jan wrote.
